Bees make honey from whatever is in flower, so a honey's colour, thickness and taste tell you where the hives stood and in which season.
Sidr
From the sidr tree's autumn blossom. Thick, dark and deep, with a long, warm finish. The honey to keep for the winter and to give as a gift.
Samar
From the acacia trees of the desert valleys. Deep amber, a little bitter at the end and less sweet than it looks. Many take it by the spoonful in the morning.
Wildflower
From the spring flowers of the mountain terraces. Light, floral and gentle, the one for tea, yoghurt and children.
If it sets
Real honey can turn cloudy and firm in the cold. That is natural. Stand the jar in warm water, never boiling, and it turns clear again.
